Maxine's.....gone, but their chicken salad won't be forgotten
Maxine's Cafe & Bakery on Green River Road was one of my favorite lunch spots in the Tri-State, so I was very bummed when I found out they were closing after 24 years. The economy and increased competition were just a couple of reasons the owners decided to pull the plug. It was a cute place with wonderful, homemade food, and I will dearly miss it.
So, I tried to re-create their curried chicken salad....since it was my absolute favorite. Here's the recipe I came up with:
3 boneless, skinless chicken breats
3 stalks celery, chopped
1/2 sweet onion, minced
1/2 cup golden raisins
1/2 cup red grapes, halved
3/4 cup mayonaisse
3 teaspoons curry powder
Cook chicken breasts (I did them in the oven...400 degrees for 40 minutes) Let them cool and then chop them up. Add onion, celery, raisins and grapes.
Mix mayo & curry powder together well and fold into chicken mixture. Stir well and chill overnight. ENJOY!
